Bakari Sandholt is a bakery in Reykjavík, Iceland. They have some incredible looking sweet treats, but I’m here for something a bit more substantial. With only four hours or so of daylight during the winter months, I always feel as though I’m eating dinner.
After a morning of being beat down by Icelandic winter wind and frozen rain on their southern coast, I am famished. I am clad, head to toe, in hiking apparel. Serious. We weren't exactly out for a morning stroll. I'm talkin' crampons in tow. Upon our arrival in back in the city, I did not have the patience nor the energy to change out of this garb so I knew we'd have to go somewhere casual. Mucho casual.
Ham and egg

Two kinds of pork. A cured bacon-like meat and sliced ham with golden yolked eggs. The bread is chewy soft. I often try to re-create baguette sandwiches like these at home. I can never get them to taste as good. I'm convinced it has to do with the butter. Good cultured butter is so tricky to find around Kamloops.

Sundried Tomatoes and Chicken

This sandwich has a surprising element of curry in it. A mild curry-ness, just enough so you know it’s there, but the tanginess of the tomatoes still come through.
Salmon

I cannot say no to lox. Iceland's smoked cured fish is, in a word: Amazeballs. So, lox and a golden yolked egg?? It’s a done deal. The chives and red onions balance out and break up the smokiness of the salmon.
The baguette sandwich. Simple whole ingredients and a slather of quality butter. Often the easiest on the pocketbook. Can’t beat it.
The sandwiches are about 7,000 to 8,000 ISK each. So approximately $7.00 CAD a piece. Which I think is more than fair considering I just paid $7.25 for a hotdog recently in Vancouver. Bakari Sandholt is known more for their chocolates and delicate desserts, but the sandwiches are pretty tummy satisfying too. I could have devoured all three baguettes myself after this grueling morning. Breathtaking landscape, but grueling. Just an FYI: sideways blowing frozen rain feels like shards of glass on exposed skin. Fun times.
